HIST 252 -- Eat: A Global History of Food (3) This course surveys the global history of food since 1450 with particular attention to areas outside Europe and the U.S. It examines the history of various aspects of what has become a global agro-food system including considering the economics, politics, technologies, and cultures of food. Major shifts and events will be surveyed from the Columbian Exchange to GMOS. Gen Ed: XC. Fall/Spring.
